Here’s a pretty simple peanut chicken stir fry recipe you can make at home for a fraction of the cost of takeout. My daughter is a big fan of stir fry’s so I always experiment with different items to come up with ones that she likes. This is one of her favorites.
The recipe calls for
- Rice
- Crushed Pineapple
- Oyster Sauce
- Ginger
- Garlic
- Red Pepper Flakes
- Honey
- Soy Sauce
- Peanuts
- Diced Chicken
- Stir Fry Vegetables
We put up a couple hundred pounds of rice a few years ago utilizing a vacuum sealer and O2 absorbers. Still fresh as the day we put it in the pantry.
I dumped the whole quart of rice into a pot and two quarts of water and got that boiling. I dumped the bag of stir fry vegetables into a pan and set it on medium heat. If you eat a lot of stirfrys, there is a great list of vegetables to start your back yard garden with printed right on the bag.
I dumped 9 oz of diced chicken on top of the veg.
I drained the crush pineapple and poured that over the chicken, if you would like a little sweeter stir fry you can pour the juice right into the pan as well.
Add a couple ounces of peanuts to give a little crunch and body to the dish.
To make the sauce, in a bowl mix together.
- 1/3rd cup of soy sauce.
- 2 tablespoons of honey
- 2 tsp of red pepper flakes
- 1 tsp of ginger
- 1 tbsp of garlic
- 2 tbsp of oyster sauce
- 2 tbsp of corn starch if you want to thicken it some
Pour that over the pan of vegetables and let it simmer for about five minutes, stirring constantly.
Dinner is served, this recipe is under ten dollars for a family of four, you can eat well for not a lot of money.
With left overs for lunch and chicken and rice soup if you would like.
