- 1/2 tsp prepared coarse mustard
- 1 tsp ground coriander
- 1/2 tsp mace
- 1/2 tsp paprika
- 1/4 tsp black pepper

Below are a couple of modifications I would personally make to the hot dog recipe.
- Use pork instead of veal
- Nutmeg can be used instead of mace
- I would smoke them instead of using the liquid smoke.
- Smoked Paprika could be used if you do not have a smoker
- Can substitute chicken or turkey for a healthier option if you have dietary restrictions that require it.
